Favorite is an understatement. For the past few months I've been doing some research to find to healthy, and low carb white chicken chili recipe. I have pulled a few ingredients here and there to create my own personal healthy version! Its so good- I just HAD to share it with you all. After all, it's good for the soul.
Ingredients:
· 1 tbsp. of olive oil
· 1 yellow squash (chopped)
· 1 yellow bell pepper (chopped)
· 3 celery stalks (chopped)
· 1 can of corn (undrained)
· 1 jar of great northern white beans
· 1 small can of green chilies (undrained)
· 1 quart of chicken broth
· 3 chicken breast (shredded)
· 2 teaspoons of minced garlic
· 1 tbsp. of oregano
· 1 tbsp. of cumin
· 1 tbsp. of chili powder
· 1 tbsp. of garlic salt
· Salt and pepper to taste
Instructions:
- Preheat oven to 400 degrees
- Coat 3 chicken breasts in olive oil, salt, and pepper
- Bake chicken in oven for 45 minutes, or until fully cooked.
- In a medium skillet, heat up olive oil, squash, bell pepper, celery, & garlic together until soft
- Once soft, add in oregano, cumin, chili powder, and garlic salt and cook for 1 more minute
- In a crock pot, pour in 1 quart of chicken broth, green chilies, and corn
- Pour the vegetables and spices from the skillet into the crock pot and stir together
- Once the chicken is cooked, I found that it’s easiest to use 2 forks to shred the chicken
- Once shredded, add to the crock pot
- Continue to heat up for about 30 minutes or so and enjoy!
